The Plot Twist takes Southern collard greens — slow cooked, seasoned properly, with the bitterness pulled out and the flavor locked in — and wraps them in a crispy egg roll shell. It shouldn't work as well as it does. It works better than it has any right to. Two rolls per serving, fried to order.
